Directions
- Pre-heat oven to 375 F
- Slice the eggplants into half and make crisscross lines across the fleshy part
- Glaze- add tamari, miso, maple syrup, peanut butter and about 2 tsp of water in a small bowl and whisk them together
- Place the eggplants on a baking sheet and cover them with the glaze .
- Bake them for about 25 minutes.
- To make a bowl, place some spring mix and top it with roasted eggplant, 1/2 Avocado, sesame seeds, and fresh herbs and enjoy!
