Roasted Eggplant Bowl

Ingredients

  • 2 eggplants sliced in half
  • 3 tsp tamari 
  • 2 tsp miso paste
  • 3 tsp maple syrup
  • 2 tsp peanut butter
  • fresh herbs
  • sesame seeds
  • Directions

    1. Pre-heat oven to 375 F
    2. Slice the eggplants into half and make crisscross lines across the fleshy part 
    3. Glaze- add tamari, miso, maple syrup, peanut butter and about 2 tsp of water in a small bowl and whisk them together
    4. Place the eggplants on a baking sheet and cover them with the glaze .
    5. Bake them for about 25 minutes.
    6. To make a bowl, place some spring mix and top it with roasted eggplant, 1/2 Avocado, sesame seeds, and fresh herbs and enjoy!
